Pear pikelets

Weekend breakfasts should be special.  Though we love eating out for brekky, there is nothing quite like pottering around the kitchen in pyjamas with all the time in the world, making cappuccinos and drinking juice.

For Kris and I it is normally a time to cook together, and we have our vegetarian big breakfasts down to an art – which makes eating out sometimes disappointing!

Inspired again while flicking through Delicious Magazine for the 100th time (I am going to get a subscription… the photography and recipes are so inspiring and I was surprised to see so much veggo friendly food), I decided to put our perfect pears to good use and make pear pikelets.

They were very easy and super quick and worked out perfectly even though I left out the grated apple (as I didn’t think to buy any).  Topping them with real maple syrup added just the right amount of sweetness.

Here is a similar recipe… the pear slices should be fried on each side in a little butter and the pikelet mixture added on top.

It was the perfect start to the weekend.

  1. This looks and sounds just so delectable! I’m definitely going to have to try it sometime. Had no idea you were veggo though, that’s just even more splendid 🙂

  2. your pancakes look so yummy…i just made some today but mine always tend to burn. What brand of pancake mix do you recommend. I use a brand that’s available here called white wings. I have also used the Betty Crocker mix.
